Ingredients : Spanish mackerel (meaty mid section marinated with salt and cooking wine), fresh paprika, chili pepper, garlic, ginger, garlic stalk.
Condiments : 2 tbs ssam jang(Korean red fermented bean paste), 1 tbs cooking wine, 1 tbs light soy sauce, 1 tbs sesame oil, 1 tsp vinegar, 1 tsp sugar, pinch of salt/pepper, 1 cup of water. Mix everything together.
Cooking : heat 4-5 tbs oil, add garlic, ginger, paprika, fried until fragrant, add fish and fried for 3-4 minutes on each side. Add condiments mixture, bring to boil, cover and simmer for 7-8 minutes, turn to high heat until liquid evaporates, sprinkle on garlic stalk, mix and serve.
